yes the baffles can be removed, which makes them louder, but at the same time it causes to major problems. It removes the back pressure that motors need to run correctly, and it makes the engine run leaner, which equals more heat. Both directly effect your engines performance, horsepower and MPG. If you want to change the sound of your pipes, you need to do it correctly. Purchase better slipon muflers from dennis kirk or J&P cycle (both online), then, add a bigger air intake like the stage 1 from HD etc. then you will have to make an adjustment to the air fuel mix. If carburated, you will need to re jet, if fuel injected you will need to re map the efi. None of this is cheap. But you will get a better sound, more horsepower, more torque,better MPG and a cooler running motor. How much HP you gain depends on which pipes etc you use, and how well you set the bike up afterwords. I gained 30HP and brought the torque up to 90FT LBS on my '07 ultra. I gained 32hp on my '06 dyna widfe glide, only 19hp on my '05 electra glide, and 40hp on my shovel

Sure can then be prepared to have even less low end power than you have now. But at least it will be loud. Or you could buy the overpriced Screamin Chicken exhaust and gain 3 HP if your lucky. Or trade it in for a Victory and more than double your current HP.
You can remove everything back to and including the headers.
Whether taking any of that off would be a good idea is a different question.
why would you do that? you're just setting yourself up for disappointment, and once they're out, they're junk
you are trying to make it loud on the cheap, and there's no point… buy some slip ons, and then have your injectors remapped. if all you do is butcher up your exhaust, it will run like $hit, get poor performance, sound wrong, and burn out your exhaust valves WITHOUT WARRANTY. you will gain in power and have a nice sound if you do it right

only if you want to void your warranty. DO IT RIGHT spend money on a exhaust system and have your computer remapped.

As you can see, I agree with Randy.
Get yourself some different mufflers. Chances are you will be doing that anyway.
I cored 2 sets, both ways.
I now run aftermarket mufflers.
It would have been better to just buy them first.
