What kind of other exhaust are there that make “potato” sounds for harley davidson sportsters?

Those sounds are natural for these Harleys. You don’t have to do anything really. Most Harleys are dual fire ignitions and therefore fire both spark plugs at the same time, one on the power stroke, the other on the exhaust stroke AT THE SAME TIME. Hence the sound. Buy a Harley, put on some exhaust without baffles and make sure the idle is set fairly low, and there you go….. that potato sound.

Supertrapp does make some great pipes …and depending on the number of "discs" you put in, your bike will sound awesome…. Open pipes are still a cheap and loud alternative but Vance & Hines, Supertrapp, screaming Eagle all make great looking ones with great (not too loud) sound…

Look at getting an exhaust from a company named Supertrapp. These are not inexpensive but are indeed worth every penny they cost. They are a tuneable exhaust and will improve the performance and look of your bike. They sound good and are quiet. Loud pipes not only cheeze off the public and other responsible bikers, but lead voters to pass intrusive regulations on motorcycling in general. This is not a good thing. Get a good exhuast and performance, and be a good ambassador for bikers everywhere.
